Complete Scramble

1 carrot shredded

1/4 cup macaroni noodles (optional)

1/2 cup cream cheese

5 eggs lightly beaten
2 tbsp corn flour
1 cup milk – non-fat
1 stalk celery chopped
6 sprigs fresh parsley
1/2 cup green bell pepper chopped
1 tbsp onion flakes
1/2 tbsp garlic salt
1/2 tsp black pepper powder
1 tbsp fry lite oil

Mix all ingredients in a big bowl. Stir enough not to overdo it.
Heat oil in a large skillet.
Pour over the mixture
Once sides are formed , use a big size fork and stir it enough to looses and become lumpy
Set flame into low heat. Once formed again, stir and turn upside down (you should see the bottom became golden brown).
Once formed again, turn it upside down again.
Set the flame off, cover the skillet.
Serve within minutes



Healthy Breakfast Muffins
1 & 1/2 cups all-purpose flour
1 cup digestive cookies low-fat – crushed
1 tsp. baking soda
1tsp.baking powder
1/4 tsp salt
3/4 cups dark brown sugar
1 apple – peeled, chopped
1 banana – mashed
1 cup fresh blueberries
1/2 cup pine nuts
1 cup plain yogurt low-fat ( or buttermilk )
1 egg
1 tbsp vanilla extract
1 1/2 tbsp vegetable oil

Lightly Grease muffin tins, pre heat oven to 350 degrees

Mix in a big bowl: all-purpose flour, digestive cookies, baking soda, baking powder,salt, sugar
In a medium bowl, combine : egg, oil, banana,blueberries,apple,yogurt, pine nuts, vanilla
Once well blended,pour it over to the dry mixture.
Blend evenly.

Scoop two spoonfuls of the batter to each muffin tins (way up to the rim)

Bake for 15 mins. Or insert a toothpick, if it comes out clean, then turn the heat off.
Let it stay inside the oven for another 2 minutes, then put out and place on a stainless grill.
wait for minutes to serve.
